One cup of the given ingredients:

  • Carrots with the skin on in rounds

  • Water: 12 cups
  • Dried shiitake mushrooms: half cup

  • Kelp or komby: 4 strips

  • 1 chopped ginger of thumb size
  • 6 garlic cloves with skin on sliced into half

Add-Ins as per serving

  • Tamri or coconut aminos 1/2 tsp
  • Light miso 1 tsp
  • Finely minced ginger 1/4 teaspoon
  • Sesame seeds a pinch
  • Some sliced jalapenos (as per your choice)
  • Some chili flakes (as per your choice)

1.  Shake the carrot, onion, mushrooms, leek, and celery in the coconut oil and bake at 400 degrees F (205 degrees Centigrade) for half an hour, mixing the ingredients every ten minutes.

2. Take a large pot and mix the roasted vegetables and their juices together with dried shiitake, water, pepper, kombu, garlic, and ginger.

3. Put the lid on and let it boil, then instantly reduce it to a simmer. Allow the mixture to simmer on low flame for half an hour.
